Zymé

 

Zymé is the Greek word for yeast, a basic ingredient in wine-making and strongly associated with natural production.

 

These values act as a constant reminder of the combination of tradition and innovation on which Celestino Gaspari chose to base his business. This vertical tasting will help illustrate the challenge that this choice represented.

 

Celestino Gaspari

 

An enologist and lifetime learner. After training in the Valpolicella region and helping to set up about ten companies in the area, he decided to start a new venture in 1999, and created Zymé. The business is the result of continuous research and experimentation, based on a climate of culture and transparency, and represents an attempt to achieve simplicity by cutting out all superfluous elements.
